The Gluten Free Bistro provides the type of foods that the celiac and gluten intolerant community have been craving, to satisfy their palates and promote their health. We have found that most gluten-free packaged foods lack: flavor, texture, quality, and nutritious ingredients, so we decided to create gluten-free foods that use the highest quality ingredients which are nutrient dense, and delicious. We are proud of our gluten-free pizza crust and fresh-style pastas and assure you that each bite will remind you of the gluten containing products that you crave.

Today’s gluten-free products contain are what we call “white” ingredients. These “white” ingredients, i.e., white rice flour and starches: lack vitamins, minerals, flavor and fiber. In addition, these products usually have high sugar, a high glycemic index, and high sodium content, as well as leavening agents containing aluminum. Our products are different because they contain a proprietary blend of whole grain gluten-free flours, called the Bistro Flour Blend, providing flavor, vitamins, minerals, protein, and fiber. The Bistro Flour Blend is made of brown rice flour,  buckwheat flour, whole grain sorghum flour, tapioca starch, organic coconut flour, and xanthan gum. This one of a kind flour blend contains 100% whole grains and only one starch, making it one of the most nutritious blends on the market. For the celiac and gluten intolerant populations, nutritious products are necessary to maintain health and rebuild nutrient deficiencies for those suffering from malabsorption. We are dedicated to making products that are all natural, GMO-Free, trans fat free, low in sodium, and full of nutrition and taste!

Nutrition & Celiac Disease

A recent study found that the celiac population benefited from the supplementation of B vitamins in the reduction of an inflammatory marker in comparison to those with celiac that took no B vitamins. (World J Gastroenterol. 2009 Feb 28;15(8):955-60). [Insert link to study] Malabsorption of nutrients coupled with eating gluten-free products that lack nutritious ingredients is not what is best for this population. Our Bistro Flour Blend provides 30% of most B vitamins,  protein, iron, calcium, and fiber. This flour blend was formulated by a team of nutritionists and is intended to simulate the flavor, nutrition, and texture of whole-wheat flour.
