Julie is a certified herbalist and holds a Master’s degree in nutrition from the University of Bridgeport in Connecticut. She has been involved in the field of nutrition for twenty years and started work in a conservative hospital setting as a registered dietitian. Upon completion of her herbal certification she began her career in complementary health and worked for years in research and development for a professional line of nutrition supplements. She has instructed many on-line nutrition classes and has continued a private practice throughout her career. The Gluten Free Bistro is the culmination of years of nutrition experience and living gluten-free combined with a genuine desire to provide a nutritious product for the celiac and gluten intolerant communities. Kelly McCallister, CFO

For 15 years, Kelly suffered from stomachaches, lethargy, bloody noses, and migraines that went undiagnosed by several doctors. Her symptoms were relieved when she received a nutritional analysis and discovered that she was gluten intolerant. This diagnosis changed her life. She has been gluten-free since 2004.

Kelly has years of experience in the restaurant industry. Her passion for and expertise in this industry, coupled with a desire to create delicious gluten-free foods inspired her to be a part of The Gluten Free Bistro.

Barb Verson C.N., Nutritionist, COO

Barb began her career in child nutrition over thirteen years ago. She has spent her lifetime in sports and nutrition and is dedicated to helping others pursue a healthy lifestyle. Eight years ago she started a career in the supplement industry, where she has educated holistic practitioners by using foods and supplements to treat a variety of health conditions. She has attended over 1000 hours of nutritional seminars and has found an increase in the number of people who have sensitivities and intolerances to gluten.

With her passion for wellness and a commitment to helping others she believes that providing healthy gluten-free products is a great way to help those who are gluten-free.
